Pork carnitas tacos with pickled onion and Monterey Jack cheese. Except it's in a bowl with cauliflower.

1 serving prepared

Here's what you get:

Yellow onion
Cilantro
Lime
Ground pork
Chicken stock concentrate
Sour cream
Poblano pepper
Roma tomato
White wine vinegar
Southwest spice
Tomato paste
Chipotle powder
Monterey Jack cheese
Flour tortilla (not pictured/used)

Substitute:
Cauliflower

The cauliflower:

In a small saucepan the cauliflower was boiled with about a half cup of water first on high heat for about 2 minutes and then the heat was turned to medium low.

A little bit more water was added while the meat was cooking and at the end I used a potato masher to break up the cauliflower and then mixed it with some lime juice and cilantro.

The protein and veggies:

The ground pork with started first in a pan with a little bit of avocado oil Browning and breaking it up as I went. This was about 6 minutes per the directions. The meat was then removed from the pan.

Next into the pan was the poblano and chopped onion these were cooked until soft before the ground pork was added backed into the pan. The Southwest spice, stop concentrate, half of the tomato paste, and 1/4 cup of vegetable broth was added. This was cooked on medium heat until the liquid was reduced.

The onions:

To make the pickled onions in a small bowl that slice onions was combined with the vinegar a quarter teaspoon of sugar and salt.

The crema:

To make the crema is sour cream half of the juice from the line and the Chipotle powder were mixed together.

The plate:

This was great as a bowl,  the pickled onions were a great addition adding a little bit of sweet to the dish. Note: I didn't use as much sugar as a recipe calls for.

Bacon butter!

Making: Today I'll be making bacon butter. Whenever I make bacon I save the grease. Now that I have enough it will be turned into batches of bacon butter.  I used about 2.75 sticks of butter total. Cut into jars then I let them sit until the butter was close to room temperature.  The bacon fat I have collected (Stored in the refrigerator) was heated in bits over a double boiler until liquified but not too hot.  The melted bacon fat was poured over the butter. You can use a strainer to get rid of and chunky bits and then mixed until well incorporated. The smaller jars have just over 3 oz butter. The bigger jar has 4.3 oz butter.  Here are the finished jars. These will be stored in the fridge and used to cook veggies and sear meats. You could also put herbs in the jar for different flavors. - Kris

The bacon was placed on a wrap set into a baking tray and placed into the oven for 8 minutes.  While the bacon was cooking for the first 8 minutes I added the spices and veggie broth to a small pan and began to eat them up until I got a syrupy liquid.  Once the eight minutes were up I brushed one side with the sauce and placed back into the oven for three minutes. This process was repeated by flipping and brushing the other side of the bacon before returning to the oven. Total cook time was 25 minutes The plate! ...

Next I began warming the beans on low in a small pot and got the cast iron pan going for the chicken. The white onion and butter were added to the pan first, ...
