Dutch baby breakfast

Making : Cinnamon Dutch baby with bacon & figs  1 serving prepared  Here's what I have: Dutch baby: Two large eggs  1/4 cup gluten-free 1:1 flour  2 oz heavy cream  1 tbsp sugar  4 tablespoon butter Topping: 1/2 teaspoon cinnamon  1 teaspoon confectioners sugar 1 oz Maple syrup  Sides: 4 strips Wright hickory smoked bacon 3 Fresh figs Preparation:   Small convection oven was preheated to 350°. The bacon was precooked on convection setting 375° for 18 minutes.  Originally had planned to use a 6 inch pan (pictured) but ended up with too much batter so I moved up to an 8-inch cast iron pan. The butter was melted in a 8 inch cast iron pan. A little bit of this will be added to the Pancake batter. The rest remains in the pan. Bacon wrapped chicken tenders salad

Making: Bacon wrapped chicken tenders salad  1 serving prepared  Here's what I have: Protein: 6.1 oz Chicken tenders  3 strips Thick cut bacon  Pepper/Paprika (not pictured) Vegetables: 4 oz Red cabbage  3.8 oz Cherry tomato  2 oz Persian cucumber   1.1 oz Yellow pepper  2 tsp Everything bagel Topping  1 oz White wine vinegar  Preparation: Small convection oven was preheated to 425 degrees on convection setting. To prep the chicken it was wrapped in the bacon and secured with toothpicks. Pepper and paprika were sprinkled on. Using a cast iron pan it was first heated up on the Stove Top and the chicken was added and allowed to cook for a few seconds before placing the pan into the oven for 22 minutes. While the chicken was cooking the salad was prepared by combining the white wine vinegar and everything bagel seasoning to the red cabbage covering it then setting aside. Bacon chicken bonanza

Making: Bbq glazed bacon wrapped chicken breast with roasted carrots 2 servings prepared  Here's what I have: Protein: 15.4 oz Boneless skinless chicken breast  6 strips Bacon  Veggies: 25.3 oz Red skin Potato  0.1 oz Scallion  0.3 oz Bacon butter 1.1 oz Tuscan cheese blend  0.2 oz Garlic paste  Salt/Pepper/Paprika  Preparation:  The oven is preheated to 425 degrees.  The chicken was prepared by wrapping it in the bacon, securing with toothpicks and setting it aside. The potatoes were first cut into chunks in boiled for 15 minutes. They were then coated in bacon butter, spice blend and garlic paste. These were then spread on a baking sheet, topped with half of the Tuscan cheese and placed in the oven. The chicken bake time was 30 mins. The potatoes were roasted for 18 minutes.  The plate! - Kris 

Another pork burger

Making: Apple pork Burger with bacon and a side of vegetables. 1 serving prepared  Here's what I have: 1.5 cups Broccoli  1/4 cup Carrot  1/4 of an Apple sliced 1/4 cup White onion  1 tsp Worcestershire sauce  Spices about 1/4 tsp each  Paprika  Garlic powder  Onion powder  Brown sugar  Salt  Pepper  5 oz Ground pork  3 strips Bacon Not pictured: 1 slice Mozzarella cheese  Mesquite BBQ sauce Preparation: The patty:  To make the burger mix I combined some apple onions along with a Worcestershire sauce and spices in a food processor and bllended them well.  This mixture is combined with the meat until well mixed. And then set aside. Next I began to boil some water and got a non-stick pan ready to cook the bacon.  Veggies and toppings: Once the pan was hot I put the bacon in for about a minute and a half per side and then put them on a paper towel to dry.  Half of the rendered Bacon F...

Mostly veggie meals

Making: Mostly veggie bowl with bacon 1 serving prepared  Here's what I have: 2.5 cups French beans  2 cups Button mushroom sliced 3 slices Bacon, cooked 3 cloves Garlic  1/2 cup Shredded carrot  1 tbsp Onion flakes  1 tbsp Stock oncentrate 1/2 tsp Bacon butter  *Not pictured  Mozzarella cheese  Broth or water Preperation: After heating up the cast iron I dropped in the mushrooms and bacon. These were took together until the bacon was warm and fat beginning to cook off into the pan. Next I added the onion flakes garlic and stock concentrate. These need to be cooked together until the mushrooms are thoroughly cooked, they will shrink slightly and become darker.  After these were cooked thoroughly I removed them from the pan and put in the 1/2 teaspoon of bacon butter followed by the French beans and shredded carrot. Since the carrots are shredded and the beans cooked quickly this won't take long. I added a bit of broth in this part...

Bacon butter!

Making: Today I'll be making bacon butter. Whenever I make bacon I save the grease. Now that I have enough it will be turned into batches of bacon butter.  I used about 2.75 sticks of butter total. Cut into jars then I let them sit until the butter was close to room temperature.  The bacon fat I have collected (Stored in the refrigerator) was heated in bits over a double boiler until liquified but not too hot.  The melted bacon fat was poured over the butter. You can use a strainer to get rid of and chunky bits and then mixed until well incorporated. The smaller jars have just over 3 oz butter. The bigger jar has 4.3 oz butter.  Here are the finished jars. These will be stored in the fridge and used to cook veggies and sear meats. You could also put herbs in the jar for different flavors. - Kris 

Breakfast at dinner time

Making: Breakfast for dinner! Here's what I have: 3 strips Bacon  2 Eggs (3rd not used) 1 tbsp Butter cut in half  1 tbsp Heavy cream  1/4 cup Carrot  1/4 cup Potato  1 tbsp Sweetie pepper  1 tbsp Chives  Not pictured: mozzarella cheese  Salt  Pepper  Paprika  Garlic powder  Onion powder Preperation: I preheat the oven to 375 on convection setting. Next the bacon was put on a v rack to cook and set aside. Next 2 of the eggs, the heavy cream, salt, pepper, paprika, garlic, and onion powder together in a bowl. Combine well. One Ramekin was greased and the mixture was put into the Ramekin and topped with some chives. This went into the oven first. Halfway through cooking the eggs I sprinkled a little mozzarella and dropped four sweetie Peppers into the middle of the egg cup. Bacon wrapped pork with a side of Goth cabbage.

Making: Today I'm experimenting with Montana Mex Sweet Salt and accidentally turning red cabbage into a super Gothic side dish. Here's what I have: 2 strips Bacon 6 oz Pork loin  1/4 tsp Montana Mex sweet salt  1/4 tsp Garlic powder  1/4 tsp Onion powder 4 toothpicks  First I mixed all of the spices together and rolled the pork loin in it and then wrapped the pork in the bacon and used any remaining spices over the bacon. Secure any loose ends of the bacon to the pork with toothpicks. Here is the prepared pork loin. It will go in an oven preheated to 450 for 20 minutes total. And then 5 minutes to rest.
