Try it out: Hellofresh 54

Reviewing: Chicken ramen in a Shoyu-style broth with mushrooms chili garlic oil and crispy onion 1 serving prepared  Here's what you get: Garlic cloves Scallion Ginger Button mushroom Sesame seed Sesame oil Chili flake Ramen noodle (not used) Pork Ramen stock concentrate Chicken stock concentrate Soy sauce (not used) Chicken cutlet Spinach Crispy fried onion (not used) Substitutes: Rice noodles  Oven baked onion  Tamari sauce (not pictured) The broth: To make the broth the scallion whites, ginger and garlic or cooked in a little bit of oil. Next 2 cups of vegetable broth were added along with the stock concentrate, and tamari sauce. This was left to simmer while the rest of the food was cooking. The Onion and garlic oil: To make the garlic oil the sesame seeds,  half of the garlic, sesame oil, salt  chili flake and a little bit of avocado oil were combined. Cilantro Ginger meatballs with veggie salad

Making: Cilantro Ginger meatballs with veggie salad 1 serving prepared  Here's what I have: Cilantro Lemon juice Honey  Ginger Ground pork Tomatoes Cucumber Onion Garlic Avocado oil Almond flour Preparation: Half of the ginger and garlic were run through the food processor with some of the cilantro and honey. This was mixed with the ground meat and almond flour and then formed into meatballs. The meatballs were cooked in an oven preheated to 350 for 16 minutes. To make the salad the rest of the onion the cucumber and tomatoes were combined with some cilantro, avocado oil, and lemon juice.  The plate! - Kris

Reviewing: Firecracker meatballs with roasted green bean & sesame rice  2 servings prepared  Here's what you get: Scallion  Ginger  Mayonnaise  Sour cream  Honey  Sriracha  Korean chili flakes  Sesame seed  Ground beef  Jasmine rice  Green beans  Not used: Panko bread crumb  Soy sauce  Substitutes: gluten-free bread crumb  tamari sauce The rice: This was prepared first I only cooked 1 quarter cup with 1/2 cup rice for 15 minutes and then continued preparation per the recipe. The protein: These are easy to put together just combine the breadcrumb, ginger, scallion, tamari sauce, salt and pepper. Then form into meatballs, these will be cooked in the oven along with the green beans. The greenbeans: To prep the green bean I added avocado oil, salt, pepper and some of the Korean chili flakes. The beans and meatballs went on a sheet together and were baked in the oven at 425 for 15 minutes. The ...

Reviewing: Beef bulgogi meatballs with roasted carrots Ginger rice and Sriracha Crema Here's what you get: Carrot  Scallion  Ginger  Ground beef  Sriracha  Sesame seed  Sour cream  Not used: Bulgogi sauce  Panko bread crumb  Jasmine rice  Substitutes:  Avocado oil  Brussel sprouts The vegetables: The oven was preheated to 425 degrees  Instead of making a jasmine rice I decided to add some brussel sprouts. The brussel sprouts and carrots were tossed with the scallion whites, avocado oil, sesame seeds and minced ginger. These were roasted for 25 minutes. The protein: The meatballs were prepped earlier the day using the bulgogi sauce recipe I came up with. Reviewing: Pork bulgogi meatballs with carrots & zucchini over rice  1 serving prepared - heavily modified  Here's what you get: Zucchini Ground pork Sesame oil Sriracha Scallions Shredded carrot Jasmine rice Sesame seeds Extras: Homemade bulgogi sauce  GF pretzel crumbs  Honey  Tamari Not pictured/used: Bulgogi sauce Panko bread crumbs Ginger (I didn't receive any) Lime     (I didn't receive any) The rice: This went on first. I cooked 1/4 cup of dry rice in 1/2 cup of water with avocado oil and rice vinegar for 15 minutes. The protein: The meatballs were prepared a few hours before dinner.  I had to substitute with my own bulgogi sauce and gf pretzel crumbs in place of the panko. These were mixed and set to rest in the fridge. The bulgogi sauce is the same as a previous recipe I made with the addition of pear. Quick Beef stir-fry

Making: Quick Beef stir-fry  1 serving prepared  Here's what I have:   3 oz Beef marinated in tamari/sliced  1/4 cup Carrot 1/4 cup Rice  1/4 cup Peas 3 Button mushrooms sliced 2 tbsp Onion  1/4 cup Beef broth  1 tsp Sesame oil  1 tsp Brown sugar  1 tsp Garlic paste  1 tsp Ginger paste  Pepper flake Tamari Preparation: The beef was marinated in tamari sauce and then sliced before cooking. Rice was prepared simmering 1/4 cup dry rice to 1/2 cup water for 18 mins.  In a separate pan I cooked the carrots on high heat for 8 minutes before removing them from the pan. Next the sesame oil was added along with the onion and beef then cooked for about four minutes before adding the rest of the vegetables the broth and seasoning. Everything was cooked for an additional 8 minutes making sure to mix the beef and vegetables well. The carrots were added back and mixed in before plating. The plate! - Kris...

Reviewing :   Szechuan pork and green Brean stir fry with peanuts and Jasmine rice 1 serving prepared   *Here's what you get: Ground pork  Green beans Ginger  Peanuts  Szechuan paste (not used) Jasmine rice  Scallions  Sweet soy glaze (not used) Substitutes: 1 tbsp Honey  1 tsp Orange and ginger seasoning 2 tbsp Tamari The rice: The full bag of rice was prepared because the other half will be used in tomorrow's dinner. This went pretty quick and was a 18-minute cook. The protein and green beans: The ground pork was quick to cook and was started during the second half of the rice cooking time so everything was completed around the same time.  The peanuts were run through a food processor to make cooking easier.  The honey was mixed with some tamari and the orange ginger seasoning before adding to the meat. Reviewing: Chicken katsu with roasted green beans and ginger rice 1 Serving prepared  Here's what you get: Ginger (not pictured/used) Green bean Garlic powder Cornstarch Katsu sauce (not pictured/used) Jasmine rice Chicken cutlets Panko bread crumbs (not pictured/used) Sour cream Sesame seed Substitutes: Home made GF katsu sauce Glutino GF pretzel sticks, processed to make crumb coating. The rice: This was a reheat of yesterday's leftover rice.  I was unable to use the ginger provided as it arrived squishy and unusable. To substitute I used ginger paste I have on hand.  The protein: The chicken was baked instead of fried to reduce oil use. I prepped tje same way the recipe suggested, then baked 400 degrees for 18 mins. The greenbeans: These were cooked in the cast iron pan with 1/2 tsp butter instead of roasting. Reviewing: Pork & Veggie Bibimbap with Zucchini, Carrots & Jasmine rice 1 serving prepared  Here's what you get: Jasmine rice  Carrots  Ginger  White wine vinegar  Sriracha (I used my big bottle) Ground pork -5 oz used  Scallions  Zucchini  Garlic  Sesame oil  Soy sauce (not used) Tamari (substitution) The rice: I only made a 1/4 cup, using a little over 3/4 cups of water and a tsp rice vinegar it took 15 mins total to cook. The sauce and scallion pickles: Both of these were easy prep and take just a few seconds to put together after the scallions are chopped. The veggies: The prep for these was pretty quick and I like the idea of thin slicing  for the carrots. Unfortunately I destroyed my potato perler and used a spiral cutter instead. I also decided to use a non stick pan this time and... nope.  The veggies came out fine but I didn't get the same char I like when using my cast iron pan.  The protein: ...

Lunchtime: Veggie soup

Using some  pre prepped veggies and odds and ends from other meals I'm making a pot of my weekly Lunch soup. You can make it with whatever veggies you might have around. Here's what I have: 1 cup Asparagus stalks 1 cup Broccoli stalks  1/2 cup French beans (found last min!) 2 cups Carrot  2 cups Red cabbage  1 cup Onion/Shallot mix 4 cloves Garlic chopped  1 cup parsley  3 tbsp Bullion  1 tbsp Ginger  1/2 stick Butter 6.5 cups Liquid (water or stock) How I make it:  To start I get the butter in the pan and brown it just slightly before adding the onion and shallot mix. Those are cooked down and the garlic is added and cooked for a minute or so. The carrots are added next followed by the rest of the veggies. Next add 2 cups of liquid, the bullion and Ginger. The parsley goes in after that followed by the rest of the liquid, mix well.  The pot is brought to a boil and then turned down to medium or lower heat. Once t...

Sunday lunch: Roasted chicken and veggies

Roasted chicken leg and vegetables Serves 1 **Preheat oven to 425 degrees Here's what I have: One chicken leg  To season: Paprika  ginger powder  pink sea salt  pepper 1 tsp butter cut in half 1 cup of asparagus  1/2 cup potato  1/4 cup onion  1/8 cup sweetie pepper 1 tsp honey  1/4 tsp Minced garlic  To start I combined all of my spices and season the chicken and then set that to the side. In a cast iron skillet I took half a teaspoon of butter and added the onion and other vegetables. These were cooked for about 5 minutes and then pushed one side of the pan. The remaining butter was then added until melted and the chicken placed on the other side of the pan. The chicken and vegetables were then cooked for 30 minutes. At the 25-minute Mark add the honey garlic mix to the top of the chicken and let brown. At the end I decided to add some homemade fermented shredded beets.
