Meatless meals 3

Making: Ginger cashew veggies with rice  1 serving prepared Here's what I have: 1/4 cup Rice  1/4 cup Sugar snap peas  1/4 cup Carrot  1/8 cup Cashew  1/4 cup Onion 1 tsp Ginger paste  1 tsp Honey  1 tsp Tamari  1 tbsp Scallions  Preparation:  The rice was prepared first by boiling a half cup of water and adding a little bit of avocado oil and rice vinegar before putting the rice in. That was brought back to a boil stirred and then turn to low and a timer was set for 15 minutes. In a non-stick pan I added a small drizzle of avocado oil and then put in the cashews, onion and carrots. This was cooked for about 5 minutes before adding the peas, tamari, honey and ginger paste. Everything was mixed well and then covered with the lid. The heat was set to low for another five minutes of cooking. The plate! - Kris 

Quick Beef stir-fry

Making: Quick Beef stir-fry  1 serving prepared  Here's what I have:   3 oz Beef marinated in tamari/sliced  1/4 cup Carrot 1/4 cup Rice  1/4 cup Peas 3 Button mushrooms sliced 2 tbsp Onion  1/4 cup Beef broth  1 tsp Sesame oil  1 tsp Brown sugar  1 tsp Garlic paste  1 tsp Ginger paste  Pepper flake Tamari Preparation: The beef was marinated in tamari sauce and then sliced before cooking. Rice was prepared simmering 1/4 cup dry rice to 1/2 cup water for 18 mins.  In a separate pan I cooked the carrots on high heat for 8 minutes before removing them from the pan. Next the sesame oil was added along with the onion and beef then cooked for about four minutes before adding the rest of the vegetables the broth and seasoning. Everything was cooked for an additional 8 minutes making sure to mix the beef and vegetables well. The carrots were added back and mixed in before plating. The plate! - Kris...

Reviewing: Cherry Balsamic chicken with almond rice and shaved carrots 1 serving prepared  Here's what you get: oops I forgot... Carrots  Garlic rice  Balsamic vinegar  Cherry Jam  Scallions  Almonds  Chicken breast  Chicken stock concentrate Add on: Brussel sprouts The rice and Brussels sprouts: I decided to add brussel sprouts, D's work at a small part with some vegetable broth until the most Polly finished and then left to steam. The rice is precooked leftovers from yesterday's meal.  I toasted the almonds in butter per directions and then added garlic when reheating the rice. The protein: The chicken doesn't take long to complete it was cooked for a total of 14 minutes turning halfway through. The carrots: I didn't get to try the shaved carrots in another meal so I decided to do that here and it made a time for these a lot easier. There were thrown in the pan after the sauce was done and heated up until tender....

Reviewing: Sesame beef tacos, with quick pickled veggies and chili sour cream  1 serving prepared   Here's what you get: Radish  Scallion  Persian cucumber  Cilantro  Red cabbage  Korean chili flakes  Garlic powder  White wine vinegar  Sour cream  Sesame oil   Substituting: 5 oz Ground Bison Baby level hot sriracha  1/4 cup Rice Tamari sauce  Lime juice  Not used: Soy sauce  Actual hot sriracha  Flour tortilla  Ground Beef  The pickles: Pickled veggies were very quick prep I would suggest adding the vinegar and sugar together and stirring them until the sugar dissolves. Once that was done I added the mixture to the sliced veggies and then did the salt/pepper. This prevents having granulated sugar dropping to the bottom of the bowl. Pork Bulgogi!

Pork Bulgogi  Serves 1 My first attempt to make bulgogi with a limited amount of ingredients. Day 1 Here's what I have: * Marinade 1/4 cup tamari  2 tbsp brown sugar  2 tbsp sesame oil  3 cloves of garlic - pressed  1 tbsp Ginger 1 tsp red pepper flakes  1/4 tsp pepper  6 oz pork loin Frozen for 45 minutes and thinly sliced. The pork was marinated overnight, the recipes I found stated you could do so for an hour or two and be just fine. For this recipe I am missing red pear and red pepper paste. I'll make a second attempt when I can get those and compare.  Day 2 Prep your finishers, I'm adding shitake mushrooms to the meat. Today I'm doing rice and red cabbage as sides. Reviewing: Hellofresh Baja Rockfish with yellow rice and salsa fresca. Serves 2 I only prepared a half serving for the salsa in this recipe but cooked all of the rice and Rockfish incase that didn't keep well uncooked. The chili pepper wasn't used because I'm a large baby about spicy stuff.  You can find the full recipe on their website.  Here's what you get: Grape tomatoes  Cilantro  Chili Pepper (not used) Jasmine rice  Sour cream  Cumin  Scallions  Lime  Turmeric  Mushroom stock concentrate Rockfish The instructions, were pretty easy to follow. I did some pre-prep once I received the box so most of the ingredients that needed to be cut were ready to go. If you don't have a lemon zester, a cheese grater that has a spice grater section will work just fine. The rice: The package you receive will be about half a cup uncooked.
