Meatless meals 7

Making: Roasted sweet potato, onion and red cabbage  1 serving prepared (2 servings if prepared as a side dish) Here's what I have: 11.5 oz Sweet potato  7.1 oz Yellow onion   2.2 oz Red cabbage  0.9 oz Monterey Jack cheese  0.2 oz Avocado oil  0.3 oz Beef bouillon concentrate  0.2 oz Scallion Preparation: The scallion and cheese were held to the side. This will go into the dish last. The oven was pre heated to 425. In a large bowl the Cabbage, onion and sweet potato or combined with the avocado oil and beef bouillon mix. A little bit of pepper was also added. After placing the veggies on the sheet pan these were placed in the oven for 35 minutes. The plate! - Kris 

Spicy beef over roasted sweet potato & asparagus

Making: Spicy beef over roasted sweet potato & asparagus 1 serving prepared  Here's what I have: 4.2 oz Sirloin tip  4.5 oz Sweet potato  3.7 oz Onion  2.7 oz Asparagus  1 tsp Honey  1 tsp Sriracha  1 tsp Ginger paste  2 tsp Tamari  1 oz Veggie broth  1/2 tbsp Avocado oil Preparation: The small convection was preheated to 425 degrees.  The sweet potatoes and asparagus were tossed into avocado oil and salt and pepper was at it before adding them to the oven to roast for 25 minutes. When the potato asparagus mixed got to the 10-minute Mark I started on the beef. In a non-stick pan (medium-high heat) The Onion was added in browned and then the beef with the added and cooked fully before adding the sriracha mix. This was mixed thoroughly with the beef, the veggie broth was added, the lid put on the pot and the heat turned to simmer. Reviewing: Honey butter BBQ pork cutlets with mashed sweet potatoes & Lemony green beans 1 serving prepared  Here's what you get: Sweet potato  Honey  Sweet and Smoky BBQ seasoning  Sour cream  Lemon  Pork cutlet  Green beans  Chili flake  Extras: Butter The honey butter: I made this first by slightly heating the butter and adding honey. This was placed in the fridge while the rest of the food was being prepared. The mashed sweet potatoes: I steamed the sweet potatoes for 15 minutes before mashing. These are easy to do you just add the sour cream and mix it well to finish it off. The protein: After seasoning the cutlets and heating up a nonstick skillet I cooked the cutlets for 3 minutes per side and then removed from the heat to rest The greenbeans: The green beans went into the same steamer basket used for the sweet potatoes and were left there for four minutes so they were cooked but still crunchy. Reviewing: Chicken sausage sweet potato and kale soup. 1 serving prepared  Here's what you get: Forgot the cheese! Sweet potato  Kale  Italian chicken sausage mix  Chili flake  Yellow onion  Italian seasoning  Chicken stock concentrate  Parmesan cheese  Not used: Demi baguette  The soup: Per instructions I started by cooking the onion and sausage together until the onions are browned and the sausage was cooked through.  Next the sweet potatoes, stock concentrate and spice packet was added along with 1 in 1/4 cup of vegetable broth. After the soup was done simmering for 7 minutes per instruction I put the kale in and let it cook for an additional seven minutes. Side: Since I can't have the baguette I made some GF cheese crackers to go along with the soup today. The process for that will be posted at a later date. The plate: And flat bread - Kris

Porkchop with balsamic onion shallot mix, green beans & sweet potato

Making: Porkchop with balsamic onions,  green beans & sweet potato 1 serving prepared  Here's what I have: 4 oz Pork chop  1 medium sized Sweet potato  1.5 oz Balsamic vinegar  Steak seasoning  1/4 cup White onion  1 small Shallot  1/2 cup Green Bean  1 tbsp Bacon butter Preparation: After preheating the oven to 425 I rolled sweet potatoes in avocado oil and a little bit of salt. These went in for 25 minutes. The pork chop is prepared by coating in steak spice and a little bit of salt. About 10 minutes into the potatoes being in the oven I started the green beans by heating up a nonstick pan using a small portion of the bacon butterand steak spice to cook them. After the green beans were done the pork chop was cooked (high heat) with a dab of bacon butter in the same pan for 4 minutes each side and set to rest. While the pork chop was resting I used the remaining bacon butter to brown the onions. This took about 4 minutes a...

Making: Pork and sweet potato bowl with kiwi salsa 1 serving prepared   Here's what I have: 4 oz Ground pork  3 Button Mushrooms sliced 2 tbsp White onion  1 Kiwi  1 Roma tomato  3 oz Sweet potato  2 tbsp Cilantro 1 Lime  1 tbsp Chicken stock concentrate  1 tbsp Garlic paste  1/4 tsp Paprika Preparation:  The oven was preheat it to 400 and after tossing the sweet potatoes with a little bit of olive oil they went in for 25 minutes. The salsa was prepared next by combining some of the onion with the kiwi, Cilantro, tomato. The line was Juiced and poured over then salt and pepper were added to taste. In a non-stick pan the ground pork remaining onion and mushroom were cooked for 5 minutes adding the stock mix last and set to simmer for 10 minutes. During plating I added some sour cream and more Cilantro.  The plate! - Kris 

Hodgepodge dinner

Making: It's a hodge podge dinner kinda day. Today I am using some leftover veggies, chicken and hellofresh warm and Smoky Southwest spice blend 1 serving prepared   Here's what I have: 1/2 cup Green beans chopped  1 small Sweet potato  5 oz Chicken  1/2 cup Red and Yellow bell pepper  Scallions 2 tbsp Sour cream HF warm and Smoky Southwest spice Preparation: After preheating the oven to 375 I drizzled the sweet potatoes in a little bit of oil and popped them in the oven for 25 minutes. The rest of the cook time is based around this. The sour cream has a bit of the spice blend added for dipping the fries and green beans. Italians will be added to the chicken pepper mix once it is finished cooking. I waited until the potatoes were in the oven for about 8 minutes before starting the rest. The chicken was tossed with the remaining Southwest spice blend and a little bit of salt. These were cooked in a non stick pan for 6 mins before adding the peppers. G...

Reviewing: Spicy Maple chicken with mashed sweet potatoes & roasted green beans 1 serving prepared   Here's what you get: Sweet potato  Panko brand crumb (not used) Sour cream  Maple syrup  Chicken breast  Fry easoning  Green bean  Chili flake Substitution: Parmesan  The sweet potatoes: I steamed mine over high heat for 10 minutes before mashing. This eliminates the need for additional salt and the potatoes don't lose thier flavor. The protein: The panko wasn't used so this went fairly quick. The parmesan mixes well with the fry seasoning. I  didn't add any additional salt like the instructions call for because cheese was used. The cut of chicken cooks quickly as well since it is a smaller portion than store packaged meats. The green beans: I should have steamed these as well, in my smaller oven they tend to go extra wrinkly even with the short cooking time. Dinner on Spice Islands

Making: Sweet and spicy pork chops with caramelized onions, sweet potatoes and asparagus. 1 serving prepared  Here's what I have: 1/2  Cup Broth  6 oz Pork chops  1/2  Cup Sweet potato cubed 8 oz Asparagus  1/4  Cup White onion  ** 1 Tbsp Butter cut in half Spice Island sweet and spicy seasoning How to prepare: Since sweet potatoes take a while to cook in the oven I decided to steam them. While the water was coming to a boil I coated the pork chops in the spice and set them aside.   The potatoes were steamed for 10 minutes at med-high heat first then the heat was turned to warm. I put the asparagus into the steamer basket with them and put the lid back on the pot. I used my cast iron pan, heating it up (high temp) before placing half of the butter into it. Pork chops were cooked in the pan, turned down to medium heat for a total of 8 minutes, 4 minutes for each side. Once they were done I took them out of the pan ...
